Morning/Afternoon to you all,
Yesterday was not a Scrumptious Sunday since I was in bed half the day. I stayed up entirely too late with Haley Jane sat. night to get up and do anything productive with my sunday, so I’ll give you guys some deliciousness today.
I woke up early this morning, got all my cleaning done and now, with no one here to keep me company or take me anywhere I guess I have no other choice than to cook for myself. I’ve been in such a mood for breakfast lately that I really must make something from that category, even if it will be after lunch time before this gets done. After taking an inventory of my slowly dwindling pantry cabinets (we haven’t been grocery shopping lately) I have come to the conclusion that I can make Red Velvet Cake Pancakes (minus red food coloring, so brown velvet?, that sounds like a black porn star name though #foodporn ), and a savory egg scramble, so I ensure I feed baby his nutrients as well.
Super Simple, and both are incredibly delicious.
To start: Red Velvet Pancake Mix (sidenote: if you actually want them to be pretty and red, add 2 tsp red food coloring)
1 1/2 cups flour
2 tbsp. sugar
2 tsp. baking powder
2 tbsp. cocoa powder
1 1/4 cup milk
1 tsp vanilla extract
1/4 cup melted butter
1. Mix all the dry ingredients in a bowl
You can really do this with ANY ingredients you’re craving, originally I wanted to add asparagus, but mine had appeared to have gone bad. So here’s what I did use:
4 slices uncooked bacon (cut in 1/2)
2 baby redskin potatoes
4 grape tomatoes
Salt & Pepper to taste
1. Cut bacon slices in half, dice potatoes and half the grape tomatoes
Best Brunch Ever!
I made a quick pancake glaze, using 1/4 cup melted butter and adding confectioners sugar til the consistency was right.
